Recipe by Chris McDade
Recipe:
Makes 2 sandwiches
For the remoulade
1 cup/230 grams mayonnaise
4 tablespoons/60 grams Dijon mustard
2 tablespoons/35 grams prepared horseradish
2 tablespoons/8 grams parsley, chopped
2 cloves garlic, minced
1 tablespoon/6 grams white wine vinegar
1 teaspoon/4 grams hot sauce
3 teaspoons/10 grams old bay seasoning
4 teaspoons/12 grams capers, chopped
2 8-inch French baguettes
2 4.4 ounce/125 gram tins Wild Planet sardines with lemon
2 red radishes, sliced thin
2 scallions, sliced thin
1 tomato, sliced thin
handful of sliced dill pickles
handful of shredded iceberg lettuce
squeeze of lemon
To make the remoulade simply place all ingredients into a mixing bowl and stir to combine. That's it! Also great with any fried snacks you might treat yourself too.
Cut open the rolls and spread the cut sides generously with the remoulade sauce. Now we want to layer the ingredients that maximize both flavor and texture. Starting from the bottom slices and distributing evenly onto both sandwiches lay the sardines down making sure to cover as much of the bread as possible. Follow with the radishes, scallions, tomato, pickles, and lettuce before topping with a squeeze of lemon juice. Building the sandwich this way ensures a crispy start and finish as well as keeping that delicious sardine flavor around until the next bite!
