Makes one large salad

1 avocado

2 tablespoons/30 grams olive oil

Squeeze of Lemon

½ a jalapeno, sliced into thin rings

¼ cup/12 grams red onion, thinly sliced

¼ cup/35 grams roasted Marcona almonds, sliced in half

2 cups/100 grams radicchio, cut the thickness of your pinkie finger

1 4.25-ounce/120 gram Wild Planet boneless/skinless sardines, oil reserved

1 grapefruit, segmented

Kosher salt



Cut the avocado in half, remove the pit, and scoop the flesh into a small mixing bowl. Add 1 tablespoon/15 grams of olive oil and a squeeze of lemon juice. Mash with a fork until emulsified and season with salt. Set aside.

In a large mixing bowl place the jalapeno, red onion, Marcona almonds, and the radicchio. Season with a pinch of salt and toss together. Add half of the liquid from the sardine tin, the sardine,, the remaining olive oil, and a squeeze of lemon. Toss together.

Pull a large bowl from the cupboard or two if you'd like to serve to smaller portions. Place the mashed avocado in the center of the bowl and spread it out a bit. Top the avocado with the grapefruit segments. Place the radicchio-sardine mixture on top of the grapefruit segments. Enjoy!
