How to make Sardine Pasta with trout roe and crème fraîche #wildplanet #sardines #shorts #pasta
Recipe by Chris McDade
Recipe:
1 4.4 ounce/125 gram tin Wild Planet sardines with lemon
2 tablespoons mixed soft herbs, I like dill and chive here
6 ounces/170 grams dried spaghetti
kosher salt to taste
2 tablespoons/28 grams butter
3 tablespoons/45 grams creme fraiche
2 tablespoons/20 grams preserved lemon
2 tablespoons/55 grams smoked trout roe
Juice from half a lemon
Fill a pot of water that can cover the spaghetti by 2 inches. Bring to a boil and season with kosher salt so that the water is just a bit less salty than the ocean.
Add you spaghetti making sure it is completely submerged. Stir the pasta every minute or so to ensure it doesn't stick to itself.
Meanwhile, finely chop your herbs and preserved lemon.
When your pasta is about 90 percent cooked add it to a preheated pan with about 3 ounces of the pasta water. Cook for 30 seconds or so and add the butter. Cook until there is very little water left and the butter is emulsified.
Stir in the creme fraiche and remove from the heat. Add the preserved lemon and sardines.
Finish by folding in the trout roe, herbs, and lemon juice. Adjust with pasta water if things are looking tight.
Divide the pasta between two bowls, sprinkle with a little more herbs and enjoy.
