Serves 2

2 slices sourdough bread

4.8 ounces/135 grams of thick cut bacon, 2-4 slices

1 tablespoon/14 grams olive oil

1 cup/170 grams cherry tomatoes

¼ cup/40 grams pickled peppers

1/4 cup/15 grams red onion, thinly sliced into half circles

8 leaves thai basil

2 teaspoons/9 grams sherry vinegar

1 4.25 ounce/ 120 gram Wild Planet skinless/boneless sardines, drained

kosher salt

fresh black pepper



Heat a saute pan over medium high heat until hot. Drizzle in a bit of olive oil and add the sourdough bread. Toast until one side is golden brown. Flip the bread and add the slices of bacon. Cook  until beautifully golden on both sides. About 2 sides per minute. Transfer bacon to a large mixing bowl but make sure to leave the fat behind in the saute pan. Make sure to pull the bread when the other side is golden brown.

Add the olive oil to the saute pan. Now you have a pan with both olive oil and rendered bacon fat. Add the red onions and cook until they are about half cooked.

Add your tomatoes and cook until they are blistered with a bit of color. You'll want to swirl the pan a few times so that several sides of the tomatoes see the bottom of the pan. This should take you 2 minutes or so. Remove the pan from the heat and add the sardines with their oil. Mix the sardines through your tomato and onion mixture.

Add the sherry vinegar and basil.  Scrape everything from the pan into the mixing bowl using a rubber spatula. Fat is your friend here.

Pull two plates from your cupboard and place a slice of toasted bread on each. Divide your bacon between your slices of bread. Now, spoon your sardine mixture over each slice of bread. Enjoy!
